Cooking With Corso: Apple Date Crisp Dessert

Sick of s’mores? You, yes you, can whip up this delicious Apple Date Crisp dessert while out on an adventure – with an assist from champion camp chef to the stars, Chef Corso, of course.

For a break from graham crackers and marshmallows, you’ll need a couple of apples (preferably on the sweet side, such as a Sweet Delicious or Fuji), a 2-liter pot, some dates (the edible kind), a bit of cinnamon, and a few minutes of cutting up ingredients. Let it all simmer for 5-10 minutes in a cooking pot, depending on heat. This recipe should serve about four people.

TIP: Corso recommends keeping cooking utensils and small spice containers and such in a small bag or tote, such as a ziplock or cosmetics bag. Spices can go in used powdered drink tubes, and small liquids should always go in containers that have tops that screw on to avoid spilling while in transit.

Once the apples and dates are ready, add in some granola (even from some mashed-up granola bars) and stir it in. The granola should soak up the juice from the apples and dates. As the cooking part concludes, add a splash of apple vinegar. You can also add some vanilla yogurt as an option once you start serving it up.
